The Story
Another beautiful example of a naturally processed Ethiopian, produced by a Daniso Horsa in the southern region of Sidama - Sidama is one of Ethiopia’s most celebrated coffee regions, offering some of the country’s most distinctive cup profiles thanks to its high altitudes, diverse microclimates, and rich genetic diversity of coffee trees.
The region’s cool climate and high elevation allow cherries to ripen slowly, concentrating sugars and intensifying flavour. Combined with traditional processing expertise — often passed down through generations — this leads to vibrant, clean, and expressive coffees.
Daniso, along with his seasonal helpers, carefully processes the freshly picked cherries at his farmsite. Opting for natural processing, they wash, sort, and spread the cherries on raised drying beds, ensuring an optimal depth for drying.
